Classic Mexican Beans - Garay'S Version(These Beans Contain Less Fat Than The Canned Versions) - cooking recipe

Ingredients
    2 lb. dried pinto beans
    1 large onion, peeled and sliced
    1 or 2 (depending on taste) links pork chorizo, casing removed
    2 tsp. salt
    Monterey Jack cheese
Preparation
    Pick over, wash and drain beans.
    Place in 6 to 8-quart Dutch oven and cover with water.
    Add remaining ingredients.
    Bring to boil.
    Cover and simmer until tender (2 to 3 hours).
    Add boiling water whenever needed to keep beans barely covered.
