Cream Of Cabbage Soup - cooking recipe
Ingredients

1 small head cabbage
2 c. boiling water
2 Tbsp. butter
1 Tbsp. onion, minced
2 Tbsp. flour
1 tsp. salt
1/8 tsp. pepper
dash of cayenne
2 c. milk, scalded
Preparation

Cut cabbage very fine.
Add boiling water and cook until soft, then press through a sieve and return to liquor. Melt butter. Add onion and simmer for 3 minutes.
Blend in flour, salt, pepper and cayenne.
Add milk and cabbage mixture gradually, stirring constantly.
Strain. Reheat and serve hot garnished with cheese balls or puffs.
