Monterey Chicken - cooking recipe

Ingredients
    4 chicken breasts (skinless, boneless)
    2 Tbsp. cooking oil or margarine
    1 clove garlic, crushed
    1 small onion, sliced
    1 can diced tomatoes or fresh
    1 c. sliced mushrooms
    1 c. shredded Monterey Jack cheese
Preparation
    Heat oil in cast-iron skillet.
    Add chicken.
    Cook until white all the way through and outside is dark brown.
    (Skillet must be hot, but don't burn the oil.)
    Add garlic and onion; cook until onion is soft.
    Add mushrooms and tomatoes; cook until it's heated all through.
    Remove chicken.
