Ingredients

2 lb. potatoes (about 6 medium)
2 eggs
1/2 c. finely chopped onion
3 Tbsp. flour
1 tsp. salt (optional)
1 tsp. baking powder
1/4 c. vegetable oil
Preparation

Wash, peel and shred potatoes.
Drain completely.
Beat eggs in small mixing bowl until thick and lemon colored.
Mix in potatoes, onion, flour and salt.
Heat oil in skillet over low heat or in electric frypan.
Shape potato mixture into patties. Place in skillet.
Cook over medium or low heat, turning once, until golden brown, about 5 to 10 minutes.
Can be served with applesauce, sour cream or ketchup.
