Black-Eyed Peas - cooking recipe
Ingredients

1 lb. dried black-eyed peas
5 to 6 c. water or to cover
ham hock or salt fat back
1 to 3 Tbsp. salt
Preparation

Wash and sort peas; drain.
Soak overnight.
Next day add seasoning; bring to boil.
Reduce heat, cover and simmer about 1 hour or until tender.
Don't stir to avoid excess breaking of peas.
Serves 6.
