Italian Vegetable Casserole - cooking recipe

Ingredients
    1 medium eggplant, diced
    2 zucchini, diced
    3 small onions
    1 small can mushrooms
    1/2 can crushed tomatoes
    6 tsp. grated cheese
    3 bay leaves
    1 tsp. oregano
    1 tsp. salt
    3 oz. Mozzarella
Preparation
    Saute the first 4 ingredients in oil for 5 minutes.
    Add tomatoes, bay leaves, oregano, salt and garlic.
    Cook for 30 minutes.
    Add grated cheese.
    Place in small casserole dish.
    Bake at 350\u00b0 until heated.
    Add Mozzarella on top; place back in oven until cheese melts.
