Summer Pasta Salad - cooking recipe

Ingredients
    1/2 lb. penne (about 2 c.)
    3 Tbsp. olive oil
    1/4 lb. Mozzarella, diced (preferably fresh)
    2 Tbsp. red wine vinegar
    1/4 c. grated cheese (Parmesan or Romano)
    4 fresh plum tomatoes, cored, seeded and diced (about 1 c.)
    1/4 c. packed, finely shredded, fresh basil
    salt and pepper
Preparation
    Cook penne until just al dente.
    Drain in a colander and rinse with cold water.
    Drain again until very dry.
    Place in a bowl and toss with olive oil.
    Mix in Mozzarella, vinegar, Parmesan, tomatoes and basil.
    Add salt and pepper.
    Makes 8 side-dish servings.
