Zucchini Nut Bread - cooking recipe
Ingredients

1 c. sugar, divided
2 tsp. cinnamon
2 eggs
1/2 c. vegetable oil
1 tsp. vanilla
1 c. grated zucchini
1/2 tsp. baking soda
1/2 tsp. salt
2/3 c. chopped nuts
Preparation

Grease two 12-cup muffin pans.
Sprinkle mixture of 2 teaspoons of sugar and cinnamon over greased surface.
Shake to spread evenly, discarding excess.
Beat together eggs, remaining sugar, oil, vanilla and zucchini.
Stir in remaining ingredients and mix well.
Pour into prepared pans.
Cook for 20 to 25 minutes at 350\u00b0.
Let stand 10 minutes before serving.
Serve warm or cold.
