Pineapple And Poppy Seed Loaf - cooking recipe

Ingredients
    1 (8 oz.) can crushed pineapple in unsweetened juice, drained and juice reserved
    1/4 c. orange juice
    grated zest of 1 orange
    1/3 c. milk
    2 eggs or 4 egg whites, beaten
    1/3 c. packed brown sugar
    2 Tbsp. oil
    2 Tbsp. poppy seed
    2 c. flour
    2 tsp. baking powder
    1/2 tsp. salt
Preparation
    Preheat oven to 350\u00b0. Grease a 9 x 5-inch loaf pan. In a large bowl, combine 1/4 cup of the reserved pineapple juice, pineapple, orange juice, zest, milk, eggs, sugar, oil and poppy seed. Combine the dry ingredients; add the pineapple mixture, folding the batter just enough to moisten all the ingredients. Do not overmix. Pour into greased pan and bake 45 to 50 minutes or until toothpick comes out clean. Cool in pan 10 minutes, then turn out to cool completely on a wire rack before slicing.
