Bayou Beef-Rice Dish - cooking recipe
Ingredients

3 Tbsp. shortening
3 Tbsp. all-purpose flour
2 large onions, minced
3 lb. ground beef
1/2 c. minced celery
3/4 c. minced green pepper
3 cloves garlic, minced
2 bay leaves
salt to taste
1 tsp. each cayenne pepper and pepper
2 c. cooked rice
1/2 c. each: chopped parsley, shallots
Preparation

Melt shortening in large skillet.
Add flour.
Cook until lightly brown, stirring constantly.
Add onions.
Saute until transparent.
Add next 8 ingredients.
Cook stirring constantly, until ground beef is lightly brown.
Add 2 cups water.
Simmer for 2 hours, adding additional water as needed to prevent sticking. Add rice, parsley and shallots.
Heat thoroughly.
