Green Fettuccine Soup - cooking recipe

Ingredients
    1 pkg. (12 oz.) spinach fettuccine noodles
    3 Tbsp. olive oil
    1 large onion, chopped
    6 c. chicken stock
    2 pkg. frozen spinach, thawed and drained
    1 1/2 c. ham or chicken, chopped
    1/2 tsp. nutmeg
    1/4 tsp. pepper
    1/2 c. grated Parmesan cheese
    4 cloves garlic
Preparation
    Cook noodles according to directions; drain and toss with 1 tablespoon of the oil.
    In a large saucepan heat remaining oil; saute onion, then garlic.
    Add the stock and bring to a boil.
    Add the spinach, ham, nutmeg and pepper.
    Simmer 4 minutes and then add noodles and heat through, about 1 to 2 minutes.
    Ladle soup into bowls and serve with the Parmesan cheese.
    Serves 6.
