Macaroon Cupcakes - cooking recipe
Ingredients

4 egg whites
pinch of salt
3/4 c. 10x sugar
1 1/2 c. flaked coconut
1/2 c. blanched almonds, chopped
2 Tbsp. flour
1 tsp. lemon rind (optional) or 1/2 tsp. almond extract
Preparation

Beat egg whites with salt until soft peaks form.
Slowly add 1/2 cup of sugar, beating until stiff, shiny peaks form.
In separate bowl, combine coconut, 1/4 cup sugar, almonds, flour and flavoring.
Mix well.
Fold coconut mixture into egg whites. Spoon into 12 paper lined muffin tins.
Bake in preheated 350\u00b0 oven for 25 minutes or until a little crusty.
Cool on rack.
