Herbed Chicken With Potatoes And Zucchini - cooking recipe

Ingredients
    2 Tbsp. butter
    2 Tbsp. vegetable oil
    2 large cloves garlic, crushed
    1 1/2 tsp. dried thyme
    1 1/2 tsp. salt
    dash of hot pepper sauce
    1 broiler-fryer chicken, quartered
    4 small zucchini (1 lb.), each scored crosswise 1/4 inch deep, 3 or 4 times
    2 large baking potatoes, halved lengthwise
Preparation
    Put butter, oil, garlic, thyme, salt and hot pepper sauce in a roasting pan.
    Place in oven until butter melts.
    Put chicken in pan.
    Turn to coat with butter mixture.
    Place skin side up; arrange scored zucchini and cut sides up of potatoes, coated with butter mixture.
    Bake at 400\u00b0 for 50 minutes.
