Tarragon Turkey Dijon Sandwich - cooking recipe

2 Tbsp. low-fat cottage cheese
1 tsp. Dijon mustard
1/2 tsp. tarragon
1 large romaine lettuce leaf
2 slices thin multi-grain bread
2 oz. thinly sliced cooked turkey
dash of salt
dash of pepper
4 thin strips red bell pepper
Preparation

In a small bowl, blend cottage cheese, mustard and tarragon. Place lettuce leaf on one slice of bread and spread cottage cheese mixture over lettuce.
Place turkey on top; season lightly with salt and pepper.
Top with bell pepper strips and remaining slice of bread.
Makes one serving.
