Green Corn Cakes - cooking recipe
Ingredients

1 pt. grated sweet corn
1 pt. sweet milk or a part sweet cream would be better
3 well beaten eggs
a little white pepper and salt
2 Tbsp. melted butter
flour
Preparation

Stir first 3 ingredients all together, beating hard.
Season with a little white pepper, salt and butter, stirring it well in and add a little flour to make the ingredients adhere together, being careful not to have them too thick.
Bake on the griddle first to test the batter, that it may be of the right consistency and well seasoned before baking to serve.
If preferred, fry in hot drippings or lard.
