Scampi With Red Bell Peppers And Zucchini - cooking recipe
Ingredients

3/4 c. or 1 1/2 sticks butter
2 red bell peppers, cut into 2-inch long, 1/2-inch wide strips
3/4 lb. zucchini, cut into 1/2-inch rounds
3/4 c. chopped shallots (about 4)
1/4 c. finely chopped garlic
1/4 c. drained capers
2 lb. large uncooked shrimp, peeled, deveined and tails left intact
1/3 c. chopped fresh basil
Preparation

Melt butter in heavy large skillet over high heat.
Add bell peppers, zucchini, shallots and garlic.
Saute until shallots begin to soften, about 4 minutes.
Mix in capers.
Transfer mixture to a large baking dish or gratin dish. Can be made 4 hours ahead.
Cool completely. Cover and set aside.
