Banana Nut Loaf - cooking recipe
Ingredients

2/3 c. sugar
1/3 c. soft shortening
2 eggs
3 Tbsp. buttermilk
1 c. mashed ripe bananas (2 or 3)
2 c. sifted self-rising flour
1/4 tsp. soda
1/2 c. chopped nuts
Preparation

Heat oven to 350\u00b0.
Cream the sugar, shortening and eggs thoroughly together.
Stir in buttermilk, mashed bananas and flour, then stir in soda and fold in chopped nuts.
If using plain flour, use 2 teaspoons soda and 1/2 teaspoon salt.
Bake in greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan for 50 to 60 minutes. Yields 1 loaf.
