Baked Potatoes And Eggs - cooking recipe
Ingredients

4 large baking potatoes
4 large eggs
salt and pepper to taste
2 Tbsp. onion, chopped
1 Tbsp. margarine
1/4 c. milk
Preparation

Preheat oven to 400\u00b0.
Scrub potatoes and pierce with a fork several times.
Bake for 1 hour or until potatoes give slightly under pressure when squeezed.
Slice tops off baked potatoes and scoop out 3/4 of potato and set aside in medium bowl.
Sprinkle salt and pepper inside each potato skin and drop 1 raw egg into each skin.
Bake potatoes 15 minutes in oven or until egg yolks are set.
While eggs are cooking; heat margarine in pan; add onion. Cook for 5 minutes over medium heat.
Add cooked onion, milk, salt and pepper to scooped out potato and mash.
Remove potato skins from oven and stuff mashed potato mixture back in and reheat.
