Chicken And Rice(Spanish) - cooking recipe

Ingredients
    1 (2 lb.) chicken
    2 bruised garlic cloves
    2 white onions
    1/4 lb. rice
    2 sweet red peppers
    4 large tomatoes or 1/2 can
    salt to taste
    1/2 c. olive oil
Preparation
    Cut up chicken as for frying. Put olive oil in deep frying pan and heat gradually. Add garlic cloves. When garlic begins to color, lay in chicken and turn several times until golden brown all over; add peppers, cut in strips, and onions, sliced. Continue cooking until onions are colored. Add tomatoes, skinned and quartered, and rice; add water or stock sufficient to cover. Salt to taste and simmer until tender. Add more stock if necessary.
