Chile Verde Con Carne - cooking recipe

Ingredients
    2 lb. stew meat
    1 large onion, sliced in rings
    2 Tbsp. bacon fat or oil
    2 (1 lb.) cans tomatoes
    1 (7 oz.) can Ortega chiles, chopped
    salt
    1 tsp. oregano
    1 tsp. cumin
    1 (10 1/2 oz.) can beef broth
    flour (for dredging)
Preparation
    Flour and brown the meat in the grease in a Dutch oven.
    In a separate pan, saute onion.
    Add this to the meat, together with the tomatoes, chiles, salt, oregano, cumin and beef broth.
    Cook, covered, at 325\u00b0 for about 4 hours.
    If consistency is too thin, thicken with flour, stirred in water.
    Serve with warm flour tortillas.
    Serves 6 to 8.
