Berks County, Potato Filling - cooking recipe

Ingredients
    1 c. mashed potatoes
    2 eggs
    1 c. milk
    4 slices bread
    1 small onion, diced
    2 Tbsp. butter
    salt and pepper to taste
Preparation
    Thoroughly mix mashed potatoes and eggs with a fork.
    Add milk and set aside.
    Cut bread into 1/2-inch cubes and brown with onion in the butter.
    Stir onion and bread into potato mixture and add seasonings.
    Turn into a greased casserole and bake in preheated moderate oven (375\u00b0) for 1 hour.
    Serve as a vegetable.
    Makes 6 servings.
