Orange Brandied Sweet Potato Casserole* - cooking recipe
Ingredients

6 large yams or sweet potatoes
3 Tbsp. butter or margarine
salt to taste
pepper (freshly ground)
juice of 2 oranges
2 Tbsp. brown sugar
2 jiggers brandy
Preparation

Boil, peel and mash sweet potatoes.
Add butter, salt and pepper to taste.
Continue beating and add orange juice slowly until of mashed potato consistency.
Add brown sugar to sweeten. Add brandy.
Put in casserole and bake in a 350\u00b0 oven for 30 to 35 minutes.
(This can be prepared the day before and reheated.)
