Zucchini Bread - cooking recipe

Ingredients
    2 c. zucchini squash, grated
    4 large eggs
    2 c. sugar
    1 c. oil
    3 1/2 c. all-purpose flour
    4 tsp. baking powder
    1 1/2 tsp. salt
    2 tsp. cinnamon
    2 tsp. wheat germ
    1 c. chopped pecans
    1 c. raisins
    1 1/2 tsp. vanilla
Preparation
    Soak zucchini 1 1/2 hours in ice water; do not peel.
    Beat eggs on high speed until thick.
    Mix 3 1/4 cups flour; add other dry ingredients.
    Dredge raisins and nuts with remaining 1/4 cup flour.
    Mix into eggs on low speed, fold in other ingredients. Add vanilla.
    Grease 2 loaf pans, 9 x 5 x 3 1/2-inch.
    Line with wax paper.
    Bake in middle of a 350\u00b0 oven for 55 to 60 minutes. Freezes well.
