Faux Carrot Cake Muffins With Cream Cheese - cooking recipe

Ingredients
    vegetable oil spray
    1 c. + 1 Tbsp. Atkins (soy) baking mix
    1 Tbsp. wheat bran
    2 eggs
    1/3 c. club soda
    1/3 c. Splenda
    1/2 c. chopped pecans (or walnuts)
    1/2 Tbsp. allspice
    1/2 c. heavy cream
    1/3 c. Sugar Twin brown sugar
    1 tsp. baking powder
Preparation
    Preheat oven to 375\u00b0.
    Spray a six count muffin pan heavily with vegetable oil spray.
    Mix together 1 Tbsp. each of baking mix and wheat bran and sprinkle over the sprayed muffin pan, coating each cup well.
    This will prevent sticking.
    Mix the remaining ingredients by hand with a wire whisk until blended. Divide the mixture evenly into the six muffin cups.
    Bake for approximately 20-25 minutes.
    To test if done: They should be browned and done when a wooden toothpick inserted in the center comes out clean.
