Artichoke And Four Cheese Pie - cooking recipe

Ingredients
    9 oz. frozen artichokes
    1 onion, chopped
    1 Tbsp. butter
    1 Tbsp. oil
    1/4 c. Edam, grated
    1/4 c. Mozzarella, grated
    1/4 c. Bel Paese, grated
    1/4 c. grated Parmesan
    1/2 c. plus 2 Tbsp. heavy cream
    1/2 tsp. salt
    1/2 tsp. pepper
    pie crust of your choice*
Preparation
    *I use Tarrytown Bakery \"Birrittella's pizza dough\" which can be found in the dairy case of any major food chain found in Westchester.
    The dough should stand about 8 hours to room temperature before using.
    Makes a great pie crust for any quiche.
