Ingredients

1 3/4 c. all-purpose flour
2 Tbsp. sugar
4 tsp. baking powder
1/2 tsp. salt
3 egg yolks, slightly beaten
1 1/2 c. milk
1/3 c. vegetable oil
3 egg whites
Preparation

In a medium bowl, mix flour, sugar, baking powder and salt. In another medium bowl, mix egg yolks, milk and oil; stir into flour mixture.
In a small bowl, beat egg whites with electric mixer on high speed until stiff peaks form.
Fold egg whites into batter.
Prepare waffle iron according to manufacturer's directions.
Using 1/2 cup batter for each waffle, bake on preheated waffle iron until steaming stops and waffle is golden brown.
Makes 9 waffles.
