Tuna In Sherry Sauce - cooking recipe

Ingredients
    1 c. canned tuna fish
    1/2 c. mushrooms
    4 Tbsp. butter
    1 1/2 Tbsp. flour
    1 c. thin cream or top milk
    1/2 tsp. salt
    2 canned pimentos, chopped
    1 egg yolk, slightly beaten
    3 Tbsp. sherry wine
    4 slices buttered toast
Preparation
    Place top chafing pan direct on heat.
    Melt butter in pan. Slowly stir in flour until smooth.
    Add cream gradually and season with salt.
    Stir slowly until mixture reaches boiling point.
    Add tuna, mushrooms and pimentos.
    Heat and stir slowly to the boiling point.
    Add egg and wine.
    Stir slightly and serve at once on buttered toast.
    Serves 4.
