Eggplant Casserole - cooking recipe

Ingredients
    1 medium to large eggplant
    1/4 c. butter
    1 egg
    1 medium onion
    3/4 c. grated cheese
    1 c. milk
    1 c. cracker crumbs
    salt and pepper
Preparation
    Peel and cut eggplant in chunks.
    Boil in salt water until tender; drain.
    Add slightly beaten egg, onion, cheese, milk and seasonings.
    Mix well and top with crumbs.
    Bake at 350\u00b0 for 30 to 40 minutes.
