Vegetarian Veggie Soup - cooking recipe

Ingredients
    2 cans green beans
    2 cans tomatoes
    2 cans whole kernel corn
    6 carrots, sliced
    6 small potatoes, cubed
    4 ribs celery, chopped
    1 large onion, chopped
    2 c. hot and spicy V-8 juice
    1 small can tomato sauce
    1 pkg. Lawry's stew seasoning
    6 c. water
    2 Tbsp. minced garlic
    1/4 c. pasta lentils
    4 oz. fresh mushrooms
    salt and pepper to taste
    3 Tbsp. olive oil
Preparation
    Saute onion, celery and garlic in 3 tablespoons olive oil until tender.
    Add V-8 juice, tomato sauce and 6 cups water. Whisk in stew seasoning mix.
    Add green beans, tomatoes, corn, carrots and potatoes.
    Simmer 1 hour.
    Add lentils, mushrooms and salt and pepper.
    Simmer 30 minutes longer.
