Broccoli And Orzo Soup - cooking recipe
Ingredients

4 c. chicken broth
1 medium carrot
1/3 c. orzo
2 c. chopped broccoli (frozen)
2 eggs, beaten
2 Tbsp. grated Parmesan cheese
salt and pepper to taste
Preparation

In large saucepan, heat broth and carrot to boiling over high heat.
Stir in pasta.
Cover and cook over low heat for 10 minutes.
Stir in broccoli.
Cover and cook over low heat for 10 minutes or until vegetables are tender.
Beat eggs in a bowl, heat soup to a vigorous boil, add eggs in a slow, steady stream, stirring constantly.
Add cheese when serving.
