Ingredients

2 cups dates, pitted
1/4 cup tamarind (imly) deseeded
1 cup gud (packed brown sugar)
1 tsp. garam masala
1 tsp. cayenne pepper
1 tsp. cumin powder
Pinch of asafetida
Salt to taste
4 cups water
Preparation

Combine all ingredients.
Bring to a boil.
Reduce heat and simmer for another 15-20 minutes.
Cool and strain the mixture through a sieve.
You may also puree the cutney in a blender then strain it.
