Crawfish Quiche - cooking recipe
Ingredients

1 lb. cleaned crawfish tails
1 c. sliced, fresh mushrooms
1 c. chopped green onions and tops
1/2 c. melted butter
4 eggs, well beaten
1/2 c. half and half milk or light cream
1 tsp. salt
1/2 tsp. dry mustard
1 c. shredded Mozzarella cheese
1 unbaked 9-inch deep pie shell
Preparation

Saute mushrooms and green onions in butter until tender.
Set aside.
In large bowl, combine eggs, half and half, salt, dry mustard and cheese.
Fold in crawfish, mushrooms and onions.
Pour mixture into shell.
Bake at 400\u00b0 for 15 minutes.
Reduce heat to 300\u00b0 and continue to bake for 30 minutes or until knife inserted in center comes out clean.
Allow to stand 5 minutes before serving.
Serves 6.
