Ingredients

3 c. shredded sweet potatoes
2 eggs
1 medium onion
2 Tbsp. flour
1/2 tsp. salt
1 tsp. baking powder
1/2 c. oil
Preparation

In a food processor (steel shredding blade), shred 1 very large sweet potato to make 3 cups.
Transfer potatoes to a bowl and add beaten eggs, grated onion, flour, baking powder and salt.
