Spicy Apple Muffins - cooking recipe
Ingredients

1 c. peeled, finely chopped apples
1/4 c. sugar
1 3/4 c. plus 2 Tbsp. flour
1/4 c. sugar
4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. milk
1/4 c. melted shortening
1 egg
Preparation

Prepare apples.
Sprinkle with 1/4 cup of sugar.
Let stand while preparing batter.
Spoon flour (not sifted) into dry measuring cup.
Level off and pour measured flour into bowl.
Add 1/4 cup of sugar, baking powder, salt and cinnamon to flour (not sifted).
Stir well.
Combine milk, shortening and egg in small bowl.
Beat slightly.
Add sugared apples; mix well.
Add liquid ingredients all at once to dry.
Stir until moistened.
Fill lined or well-greased muffin cups 2/3 full.
Bake at 400\u00b0 for 20 to 25 minutes.
Yields 1 dozen muffins.
