Ingredients

1/2 c. flour
2 c. shredded zucchini
1/2 tsp. salt
1/8 tsp. pepper
2 eggs, separated
1/2 c. Parmesan or Mozzarella cheese
Preparation

In small bowl mix flour with shredded zucchini, pepper, salt and egg yolks.
In another bowl, beat egg whites until stiff, then add to mixture.
Drop by tablespoon into a skillet in hot oil. Brown on both sides.
Serve immediately.
