Green Rice - cooking recipe

Ingredients
    2 Tbsp. oil
    1 c. white long grain rice
    1 tsp. salt
    1 tsp. celery leaves, chopped
    1/2 green pepper, chopped
    1/4 c. parsley, minced
    1/4 c. green onion tops, chopped fine
    2 c. boiling water
    2 drops green food coloring
Preparation
    Heat oil, rice and salt in skillet that can be covered tightly.
    Mix vegetables and add to skillet with water and food coloring.
    Cover and simmer until done, approximately 1/2 hour. Do not uncover while simmering.
    Makes 4 servings.
