Crispy Pepper Skin Duckling - cooking recipe

Ingredients
    1 duckling (about 3 1/3 lb.)
    3 green onions
    4 slices ginger root
    2 Tbsp. cooking wine or sherry
    1 1/2 Tbsp. salt
    1 tsp. peppercorns
    1 star anise
    1 Tbsp. soy sauce
    oil (for frying)
    dash of Szechuan Peppercorn Salt
Preparation
    Combine first 6 ingredients and rub the mixture on the surface and in the cavity of the duckling.
    Marinate for 30 minutes. Steam the duckling over high heat for 2 hours or until soft.
    Remove. While the duckling is still hot, rub it with 1 tablespoon soy sauce.
