Potato Candy - cooking recipe

Ingredients
    2 small baked potatoes
    1 tsp. vanilla
    1 1/2 to 2 boxes powdered sugar
    crunchy peanut butter
Preparation
    Peel potatoes, mash in large mixing bowl.
    Gradually add flavoring and sugar until mixture is like dough.
    Roll out on waxed paper.
    Spread generously with peanut butter.
    Roll into a log.
    Chill for several hours or overnight.
    Slice.
    Store in refrigerator.
    Rolls may be frozen. Yields about 50 to 60 pieces.
