Pineapple Cucumber Salsa - cooking recipe

Ingredients
    2 c. chopped pineapple
    2 medium peeled, seeded and chopped cucumbers
    2 Tbsp. fresh mint
    1/2 finely chopped hot chili pepper
    1 Tbsp. grated ginger root
    1 Tbsp. fresh lime juice
Preparation
    In a large bowl, mix together well the pineapple, cucumbers, fresh mint, chili pepper, brown sugar, ginger root and lime juice. Cover and refrigerate 4 to 24 hours.
    Makes about 3 cups.
