Sponge Layer Cake - cooking recipe
Ingredients

4 eggs, separated
1/4 tsp. salt
1/2 tsp. cream of tartar
1/4 tsp. salt
2 tsp. cold water
1/2 c. hot water
1 1/2 c. sugar
1 1/2 c. sifted cake flour
Preparation

In small bowl of electric mixer, beat egg whites.
Add 1/4 teaspoon salt and cream of tartar; beat until stiff peaks form. Set aside.
In large bowl, beat egg yolks until light in color. Add 1/4 teaspoon salt and 2 teaspoons cold water; beat until frothy.
Gradually add hot water.
Slowly add sugar, then flour. Fold beaten egg whites into rest of batter.
Pour into 2 (9-inch) layer cake pans which have only the bottom greased and floured. Bake at 325\u00b0 for 30 to 35 minutes.
Remove from pans; cool.
Frost with Cooked Icing (recipe given).
