Ingredients

1 1/2 lb. zucchini, cut into 2 x 1/4-inch sticks
2 tsp. salt
3/4 c. white vinegar
1/2 c. water
3 Tbsp. sugar
1 tsp. mixed pickling spices
1 small onion, sliced
Preparation

Toss zucchini with salt.
Let stand at room temperature 1 hour.
Drain liquid from zucchini.
