Ingredients

6 c. vinegar
5 c. sugar
1 Tbsp. celery seed
1 Tbsp. mustard seed
Preparation

Cook beets separately until tender (do not overcook). Peel and put beets into glass jars.
Mix together vinegar, sugar, celery seed, and mustard seed and bring to a boil.
Apply boiling vinegar mixture to beets and seal.
Do not process.
