Lemon Drop Zucchini Relish - cooking recipe
Ingredients

12 c. shredded zucchini
4 c. chopped onion
5 Tbsp. salt (canning)
2 1/2 c. lemon juice
4 c. sugar or honey (try less)
1 red and 1 green pepper, chopped (or use 2 green and pimento)
1 Tbsp. dry mustard
3/4 tsp. turmeric
1 3/4 tsp. cornstarch
1 1/2 tsp. celery seed
Preparation

Shred squash with peel on and turned toward grating surface. \"Ball Bat\" size works great if peel is still soft.
Scrape out the seeds.
Shred or chop fine onions.
Mix well zucchini, onion and salt and let stand overnight.
Rinse well with cold water and drain.
