Peppermint Meringues - cooking recipe

Ingredients
    2 large egg whites at room temperature
    1/8 tsp. salt
    1/8 tsp. cream of tartar
    1/2 c. granulated sugar
    2 peppermint candy canes; crushed
Preparation
    Preheat oven to 225\u00b0.
    Line two cookie sheets with foil.
    With an electric mixer, beat the egg whites, salt and cream of tartar until soft peaks form when beaters are lifted.
    Beat in sugar a little at a time until mixture is smooth, shiny and very stiff, about 6 to 8 minutes.
    Drop teaspoonfuls onto cookie sheets (or pipe with pastry bag and star tip) close together.
    Sprinkle crushed candy canes over tops.
    Bake 1 hour, then turn off oven. Open oven door slightly and let meringues cool.
    Store in covered containers in a dry place.
    Makes approximately 4 dozen.
