Apple Cheesecake Pie - cooking recipe
Ingredients

1 c. sugar, divided
1 tsp. grated orange rind, divided
1/2 tsp. cinnamon
1/4 tsp. nutmeg
2/3 c. orange juice
1/4 c. butter or margarine
3 c. thick apple slices
4 1/2 tsp. cornstarch
4 1/2 tsp. water
2 Tbsp. lemon juice
1 deep 9-inch pie shell, baked
1 (8 oz.) pkg. cream cheese, softened
1 egg
1/2 c. almonds or pecans, chopped
1/2 c. flaked coconut
Preparation

Combine 2/3 cup sugar, 1/2 teaspoon orange rind, cinnamon, nutmeg, orange juice and butter in large saucepan; bring to boil, stirring until sugar dissolves.
Add apples and simmer just until tender and translucent, about 8 minutes.
Dissolve cornstarch in water; stir into apple mixture.
Cook, stirring, until mixture boils and thickens.
Add lemon juice.
Cool to room temperature. Spoon into baked pie shell.
Whip the cream cheese until fluffy; gradually add 1/3 cup sugar and 1/2 teaspoon orange rind.
Beat in egg.
Spoon over apples; top with almonds and coconut.
Bake at 350\u00b0 for 20 minutes or until golden. Chill before serving.
Yield: 6 servings.
