Pasta With Vegetable Sauce - cooking recipe

Ingredients
    3 cloves garlic, chopped
    1 large onion, sliced
    3 slender Italian or Chinese eggplant, sliced and quartered
    1 can Italian tomatoes
    1 to 2 Tbsp. olive oil
    salt to taste
    1/2 to 1 tsp. red pepper flakes (fresh or dried)
    basil to taste
    1/2 c. Ricotta cheese
Preparation
    Brown lightly, garlic, onion and eggplant.
    Add Italian tomatoes, cut fine.
    Cook for 10 minutes.
    Cover and cook for 20 minutes.
