Orange Parfait - cooking recipe

Ingredients
    1 (10 oz.) pkg. miniature marshmallows
    2 c. orange juice
    1/2 c. crushed pineapple, drained
    1/2 c. coconut (optional)
Preparation
    Use a 2 quart bowl.
    Microwave marshmallows on High for 2 to 3 minutes.
    They will puff up.
    Add orange juice and beat with wire whip.
    Juice and marshmallows should be smoothly blended together. Stir in pineapple and coconut.
    Pour into parfait or dessert dishes and chill.
    Top with whipped cream.
    Garnish with orange slices and a sprig of fresh mint if available.
    It's good in a graham cracker pie crust.
    Makes 6 servings.
