Bacon-Stuffed Flounder Rolls - cooking recipe

Ingredients
    3 slices bacon, cooked until crisp and drained
    bacon drippings, adding enough butter or margarine, melted to make 1/4 c.
    1 (6 oz.) pkg. stuffing mix
    1/4 c. finely chopped onion
    2 Tbsp. snipped parsley
    8 flounder fillets or other whitefish fillets (about 1 1/4 lb.)
    1 pkg. Bearnaise sauce mix
Preparation
    Grease eight 2 1/2-inch muffin cups.
    Set aside. Cook bacon until crisp.
    Drain, reserving drippings. Crumble and set aside. Measure drippings.
    Add enough melted butter or margarine to equal 1/4 cup.
