Herbed Shrimp Soup - cooking recipe
Ingredients

1 Tbsp. olive oil
1 medium white onion, thinly sliced
1 lb. ripe tomatoes, chopped
1 (3 lb.) fresh or canned jalapenos, seeded and minced (wear gloves when working with fresh peppers)
3 c. bottled clam juice
3 c. unsalted chicken broth
1 tsp. dried marjoram or oregano
1 lb. medium shrimp, shelled and deveined
1 lime, cut into wedges
Preparation

Heat oil.
Add the onion and cook until softened, about 3 minutes.
Add the tomatoes and jalapenos; cook 3 minutes longer. Add clam juice, chicken broth and marjoram.
Bring to a boil. Reduce heat and simmer 5 minutes.
Add the shrimp and simmer about 5 minutes, until they are pink, loosely curled and opaque.
