Ingredients

1 1/3 c. sugar
1/3 c. cornstarch
2 c. pineapple juice
2 eggs
1/4 c. margarine
1 1/3 c. crushed pineapple
1 tsp. lemon juice
Preparation

Combine sugar, cornstarch and pineapple juice.
Cook over low heat until thickened, stirring constantly.
Pour a few tablespoons of the hot liquid over beaten eggs and stir well.
Return to stove and cook another 5 minutes over very low heat, stirring constantly. Stir in margarine, lemon juice and crushed pineapple.
Cool and serve with a dollop of whipped topping.
